Recipe
1 package firm tofu, well pressed
1 tablespoon tamari soy sauce
Salt and freshly ground black pepper
2 tablespoons canola oil
3 tablespoons of crunchy almonds
1 cup of fresh green grapes
1 tablespoon of dried herbs
1/4 cup vegan mayonnaise (homemade or store bought)
Juice of 1 lemon or lime (optional)
1 tablespoon of olive oil
How to Make it
1. Slice firm tofu into cubes, then place it between two paper towels. Squeeze out as much of the liquid as possible for about 10 minutes, until the tofu is firm and dry. This step is important because it helps to absorb flavor from other ingredients.
2. In a small bowl, whisk together tamari and vegan mayonnaise and set aside.
3. Your pan should be about medium-high heat with enough canola oil to coat the bottom without having too much in there. Once your pan is heated up add your cubes of tofu with plenty of salt and pepper (don’t be shy with the seasoning) cook until browned on all sides then turn off the stove.
4. Add in your almonds and green grapes, followed by some fresh or dried herbs of your choice, such as basil or oregano. Don’t forget a dash of olive oil.
5. Mash up the almonds until they’re broken up into small pieces, then mash up the tofu after it’s rested for another minute or two (you can also just chop it). Fold all ingredients together until everything is well mixed so that you have an evenly seasoned dish!
